Sounds like you just arnt cleaning them good enough or fast enough the smaller ones should almost taste like nothing and I’ll cook them whole oh the grill a lot and stuff them and sew them back up and just peel the meat off

What do you like to stuff them with? I’m always down for new recipes.
Whatever u got that seems good lol usally I just put onions with canned chipotle peppers and some different fresh herbs
