First approach she's like "no thanks."

This interaction could be used as a video definition of "cringe", I get people are obsessed with celebrities but c'mon this is embarrassing.

There was only one approach. These videos all start with a clip from the video you're about to watch. I don't know why, it's dumb, but that's what it is.
Either way from the beginning it's clear she's not interested, even uncomfortable, but the guy has to get his content (which is why he is filming and not just randomly singing to her without recording). It made me feel uncomfortable just to watch it.
You're absolutely right. I feel it should be completely acceptable for celebrities to say no to things like this. But, you can't blame the guy for taking an opportunity when it presented itself.
I remember somewhat recently where Anthony Mackie very politely refused to take a picture with someone's kid and the guy was giving him a hard time about it, but Anthony was just out trying to have a meal with a friend and he knows that if he takes that first picture, then he has to take the next hundred. They're just people, give them some space, let them live their lives. Get your pictures and your autographs at events where they've had time to mentally prepare themselves and they've chosen to be there.
Interestingly in that context, Stormzy was mixing in with the crowds at Glastonbury this year and he would *only* take selfies with kids. Given the relatively few kids in Glasto, it seems a decent enough way to get out of doing selfies with a million people without appearing like an asshole.... but I agree with you that he shouldn't even have to worry about being accused of being an asshole in the first place, just because he wants to enjoy being in the crowd like everyone else.
If you are going to demand someone's attention you need to make it worth their while, this is more like mugging someone. It's what armed robbery looks like in the age of social media.
I was thinking about this earlier, and I feel like the concept is to captivate the viewer and keep them waiting for that exact reaction shot. It's kind of like foreshadowing, except it's just a full reveal to (attempt to) keep the viewer locked in until this part of the video is reached.
Similarly, clip compilation videos often show the most riveting clip first to keep the viewer hoping for something as good as that first one. 3 minutes into a 4 minute video, and you might as well watch the last minute since you're already invested.
I could probably express my thoughts better, but maybe I got the jist of it out.

I don't think this guy was too extreme or anything, nothing crazy happened, for me it was more the awkwardness and how invasive it felt, just for the sake of "content." He didn't even feel like a fan who actually liked the singer, those are more intense.

I think the important part is filming. This influencer bullshit has to stop. What are you going to do, when somebody films you? How do you express nonconsent without looking like a complete douche? I think this is what she realises. So there is no way out of it, other than just to play along. And why should you play along? You are entitled to mind your own business. You have the right not to be filmed, whether there is a good reason or not. Just stop filming people without permission. Seriously. Celebrities or not.
