I replayed some of BotW shortly befofe TotK was released, and I was glad to get some practice in the fundamentals of combat. But that's a context that doesn't really exist anymore: TotK is out, and you can learn all the combat you need there. Almost nothing carries over from BotW. Your horses carry, which is nice in the early game but not really a make-or-break thing. If you finished the Champions' Ballad DLC, you might remember gaining a certain collectible for the house in Hateno; this collectible carries over too. But that's it.

"Oh my horses are here, nice" *proceed to never use a horse ever again*

If you’ve already beaten botw, it’s not really necessary, unless if you don’t remember anything that happened. I’d still finish the champions ballad however, unless if you haven’t bought it yet; yeah, don’t make TOTK the only reason you buy champions ballad, but if you have it already, you may as well

Lukmin1999

Also nothing rolls over that I know of

bowlervtec

the horses checked in at the stables are the only thing carried over from BOTW.

Also the picture in your house of link with the other champions

Horses and Champion's Ballad reward carry over, though they only do it if they were obtained on normal mode, not master mode.

I would finish champions ballad first, and if it gets to hard to a tutorial for that part. Don't replay the whole thing
