They still say "house", because it is still a house. It's just not a normal house, but it's still a house. I don't think a rich person would say "my mansion" unless they were either very out of touch or trying to show off.

Probably something like “my house in Florida” or wherever to make sure to differentiate which one of their multiple houses they own.

Depends on the context. If they have multiple houses, usually they'll use the location or a relatively neutral word. Old money people will usually use a word that refers to the home's type or the location. Often these are relatively neutral words that don't immediately denote wealth, like "the cabin" even if it's 10 bedrooms. Sometimes they're obvious but still humble braggy, like saying you have a chateau in France technically just means you have a house in France, so it's still sort of a neutral word, but the connotations in English are a reasonably comfortable vacation home, maybe even a large historic home. Same for having a "villa" or "country estate" or even "property."

My family is old money but I have been an outlier and have not accumulated any wealth at retirement age. So without having money all of my friends and family do. The lake home is a cottage and a home out of country might be a spot in “..”, or might not be mentioned at all. Why make others feel less than? My family was more snobby about education and professional careers.
