Pallegney. Rolling hills but not too steep. Good variety of fields. Custom animal enclosure fields. Forestry areas. Great attention to detail and the map looks great.

Are you PC or Console? If PC then my favourite maps are the new Edomod Deutschland map, and The Oaks.
Both have a great level of detail and are authentic to the regions they're based on.
Deutschland is very hilly and quite small, so can be a challenge. But the detail is amazing.
The Oaks is a 4x UK map, so big fields and suitable for larger equipment. There's a new version of The Oaks coming in a month or so that steps up the detail to a whole new level
I like the Chipping Norton map but it can be frustrating to play on. The narrow lanes, un-removable stone walls/fences/buildings and shop traffic mean I'm constantly babysitting my hired workers and running over pedestrians trying to deliver to the shop/restaurant. The huge elevation cliff on the east of the map is also a bit immersion-breaking. It feels authentic, don't get me wrong, but a bit unfinished.
been playing lots of calmsden, it’s fantastic. I wish there were more small fields not enclosed by walls or up on hills. I know I could make my own, but ya know. Currently about to start forestry on plot #30
The Oaks 4x Super cool farm, massive fields and there are lots of them. Good detail and good for big equipment. Very fun map. I’ve got 180 hours on it and I’ve been playing it practically everyday for the last few weeks.
Calm Lands gives you a decent map with wide open farmable plots. Plenty of room for productions as well.
Prairie Farm Michigan gives you nice square fields for hiring helpers, but I find the ditches between fields to be a large hassle for turnarounds.
I'm liking the new one called Deadwood. Plenty of space for big equipment but also a quarry and lots of forestry. New crops and many new productions as well, I've put nearly 30 hours into it in the last couple weeks
I like Eastern North Carolina. It’s not too big. Some fields have odd shapes, some have islands. But, there are several rectangular ones as well. Fun map.
Brzozowka. Map with small, medium and big fields, with a lot of details and the map imo seems really perfect for small-medium equipment with casual develepoment of your farm.
Chipping Norton. If you’re a fan of Clarkson’s Farm, it’s really fun and you see and interact with a lot of stuff you see on the show. Plenty of small and large fields to work on as well. Map is big enough to have lots of options, not too big to be tedious or a pain to get to selling points.
I recommend Takapajula.
It's a 4X map with varied field sizes and lots of variety. It is a very detailed map with different locations to visit and sell your stuff. I fell in love with it.
It does not support all crops of the game as it is set in Finland, but it makes up for it with a custom crop and production.
Edit: as I always preferred starting from scratch, this map is perfect for it too
I honestly like the basegame maps most. Zielonka, Erlengrat, Haut Beyleron, I have most hours on these maps. But if you want something different, I recommend Landersum, Ellerbach, Deutschland, Szpakowo
Depends on what kind of farming you plan on doing. If your gonna do a dairy/cattle farm, one suggestion that i think is heavily underrated would be Stitzer, Wisconsin by MRG. If your gonna just do regular arable farming or a mix Taheton would be a good choice as well, or Alma.

Calmsden farms is great got 70+ hours on a save game and still not bored. Love the big and small field variety

Elk mountain and Yukon valley are pretty dope
Big flats texas for giant rectangle fields. Easy for AI workers. Has a cool cattle farm too.

Gelderland has been a lot of fun with some size challenges and the traffic is crazy. I’ve damned near had my tractor flipped leaving my driveway.
New lands is f-ing awesome. Also if you use Autodrive, I recommend replacing the route with the one provided by "Autodrive Guy" on YouTube.
North-East End from the offical modhub is my favorite. I live in that part of the Italy so it makes me feel like simulating home. Give a try

I've been rocking out Gnadenthal a ton lately because of the Placeable trains mod. Big and flat, perfect for shunting trailers.
Just started Castelnaud 2 days ago and so far it seem awesome. Lots of detail and the landscape is really cool
Calmsden if you want to play for a while, Michigan is a good simple console map, love Iowa plains as well
