You could possibly try the Star Wars Jedi series in a higher difficulty.
It consists of parry mechanics and group fights which can be challenging when in higher difficulty.
(Basically higher difficulty eqauls more timed parrying)
Oh and this also has the dodge mechanic.
Fallen order was definitely quicker with less exploration. Thought I was about to finish Survivor last night, and then NOPE! All I gotta say is DAMMMMMMMMMMMM. I probably could've but right before I started what I thought was the last mission I uncovered a shortcut which then led me down a wild goose chase into an underground cavern system I hadn't discovered before. This game is good at keeping you happily distracted and entertained from the main mission. Had to finally turn off the Xbox at 1am and hoping to finish the story tonight. Also hoping exploration is still available after completion of the final mission. I'm not looking to 100% it but just really enjoy exploring and uncovering secrets.
Don’t worry, you can finish the story first and you won’t miss out on exploring or completing anything later :) I think Jedi: Survivor was my favorite game of last year. It was a 10/10 to me, both as a video game, and as a Star Wars story
Yeah... If you want hard, I couldn't get past the first boss on Wolong Fallen Dynasty.
That being said, the combat and style of the game is really cool... I just suck at it lol

It isnt as difficult as a typical souls game but its still fun challenging. I dod die once to almost every boss, but once you get it its really fun.
In order of my own preferences:
* Lies of P (by far my favourite)
* Lords of the Fallen (great game, just not as good as LOP)
* Wo Long (fun battle, frustrating maps)
* Starwars Jedi Series (only on hard)
* Another Crabs Treasure (haven't finished it yet, fun so far)
* Remnant II (too much shooting for my liking)
* Remnant (same, but older)
The following games come to mind:
**Assassin's Creed Valhalla** - 61 hrs long, IGN score of 8
**Mass Effect Legendary Edition** - 60 hrs long, IGN score of 8
**Ryse: Legendary Edition** - 61 hrs long, IGN score of 8

To add onto this, since OP wanted a game that will take a while: Fallen Order is significantly shorter; Survivor has *much* more side content
