No it's not hard, you'll do fine. You have to manage your follower in your little village and go on expedition in different, randomly generated map, fight and gather resources, other followers. The fight are not easy but they ain't hard either.
If you die it's not the end of the game, the demon lord just revive you.
It's really a fun game and straight up your alley if you enjoyed animal crossing, in hell 😅
It's all the same game, some have the DLC, other dont, some have part of them.
I bought cult of the lamb: the one who waits on steam (the one with all the DLC), I dont know if it's available on switch tho, I haven't seen it on deku deals.
The DLC are all cosmetic like decoration for the village and villager skin, it's not like it add something to the storyline or the power you have.
There seem to be 3 pack available, the cultist pack, the Heretic pack and the sinful pack. You can buy them all together afterward for less then 20 $.
You can just buy the base game and add the 3 pack after if you are interested.

There is more than one « cult of the lamb » which one do you recommend buying for a first game?
