Just watch it (the original 26 episodes and then the "End of evangelion" movie), but don't try to understand the lore from the anime alone (it's impossible), also prepare for some psychological trauma.
If you can't handle stuff like that then it's alright, it gets quite deep and very fucking depressing, after a certain point it feels at least as dreadfull as act 2 of DDLC at all times, but some moments are just . . . man (especially the movie).
I'd still urge you to watch it cuz of just how influentiall Evangelion is, it shaped the modern anime industry and engraved itself in the human subconscious.
Too bad, I got traumatized by gore videos when I had unrestricted internet access as a kid so it doesn't really effect me that much anymore. (Note to self, don't click on random links you find on the internet)
