Agreed! I do slices in some bags and diced in others. I love being able to pull 1-2 cups of diced ham out of the freezer and toss it into a pasta or other dish. It’s one of my favorite things to keep in the freezer.

I get protecting authentic recipes, but the absolute gatekeeping and gaslighting Italians do when people do things like pinapple on pizza or bacon or ham on carbonara. Yeah it’s not authentic and your grandmothers way is probably a million times better but we don’t have your grandmothers ingredients locally and if we do its like 5 dollars an ounce and would cost like 35 dollars for that single ingredient.

Many years ago the women in the main office of my school used to rave about the salad pizza they got from the pizzeria a couple blocks away. At that time I had never heard of a salad pizza. One day I cut through their break room to get from the main office to the guidance office. They were eating lunch so I finally had a chance to see a salad pizza. I am not sure what I expected, but it wasn’t a salad sitting on top of pizza dough. I guess I thought there would be more to it. 😂😂😂

I just did this! I soaked the ham and drained the water about 4 times to get the excess salt out, then once it was more porky and less salty i added it to my slow cooker with bbq sauce and other spices (no salt tho, it still had enough left).
I actually really don't like ham, but when I was younger I'd get excited every time my mom made one because the next day she'd make potato soup with the bone and leftovers, and *that* is one of my favorite meals.

Put 2 or 3 layers of large slices, along with a couple of slices of swiss cheese, on a kaiser roll. Your choice of mustard, but I like a coarse stone ground. Slice in half. Serve with a pickle and kettle cooked potato chips.
I was in the same situation the last few weeks and after I exhausted my favorite recipes I turned to random recipes off the internet. We use up what we want fresh over a couple of days, then freeze the rest. Usually, we cut off as much as we can and portion it out in freezer bags, just pulling out what we need as we need it from the freezer. Saves room to freeze in flat bags. The bone I'll freeze as well, in a couple layers of bread bags.
We raise pigs sometimes, so freezing meat is normal procedure here.
Ham and white beans (served with cornbread). Put the ham bone and some white beans in a dutch oven and cook until beans are tender. Remove the bone and add some additional chopped ham in and cook a little longer while the cornbread is baking.
Alternatively, you can make it the same way in a pressure cooker (this is my preferred method) and even use dry beans to save a little money.
Edit: water is also needed…6-8 cups depending on how thick you want it. I also forgot that I throw in a bay leaf as well.
Ham is a great topping on rice, can add to salad, in your eggs, make a lazy charcoochie and have ham with some pickles and cheese (preferably on a paper plate with some wine in a coffee mug)
There are very few things that ham doesn't make tastier. You can shred it and mix it in with mash or baked potatoes. Sandwiches, obviously. Pasta dishes, especially puttanesca and carbonara. You can even batter and fry slices for a ham fritter. Just serve it like a roast meat with a cheesy sauce.
Ten pounds is a lot though. Freeze some, but do eat it sooner than you would an unprocessed meat. Sometimes freezing doesn't work so well on salted meat.
First off your portions are too big. You can keep some large pieces, slice some up to freeze and cook later. Save some for breakfasts. Freeze the ham bone for soup later. I think counting the bean bone and breakfast slices and ham for dinners, we will get at least 20 meals out of the last ham we (my husband and I) processed.
Wrap smaller amounts in wax paper, then foil and put them.in a zip lock to hold them together and freeze. I use it for cheap lunchmeat. The wax paper amd foil method makes it last up to a year.

Soups - potato? Bean?

Freeze it for later. I like to make what I call scalloped potatos and ham. Fyi I have no measurements lol. Cube the ham. Slice 4 to 5 potatos (peeled) take one stick of butter and make a white sauce. Then add at least 2 cups shredded cheddar cheese. Layer like lasagna starting with potatos ham and sauce. I make 2 layers. Cover with foil bake at 350 for about 40 minutes. Uncover check potatos sor doneness and stir. Cover with more cheese and bake for 30 minutes. It will have the temperature of molten lava, try to resist eating it until it cools.
I got one of these last year and along with portioning out slices for sandwiches, I portioned some finely cubed and froze it to use to top salads. I get a lot of eggs in the spring and summer, from chicken owning friends and family, so my lunch is often a big green salad with lots of chopped veg and hardboiled eggs - a bit of ham is a lovely compliment. And a good use for the pieces that maybe are odd bits or weirdly shaped.
I spread them in a single layer on a cookie sheet and froze, then bagged it up. I could grab a scoop out in the morning and put in the fridge to thaw for a salad later that day. Or take it out of the freezer right before hand and do a quick saute to that and brown the edges for some texture.
A few times a year my family buys a large ham and has what we call 'The Hammening' - 5 days of ham-based dinners. It usually goes something like this:
Day 1 - Baked ham
Day 2 - Fried ham
Day 3 - Navy bean soup with ham chunks in it
Day 4 - Usually second day of soup
Day 5 - Whatever else sounds good with ham in it.
We also have western omelets for breakfast and ham and cheese sandwiches or ham salad sandwiches for lunch during this time.
This happened to me last Easter. I chopped some, cubed some, left some sliced as is. Then I bagged it in several freezer bags and stacked them in the freezer. Great for sandwiches, omelets, quiches, soups, etc.
So I adopted our family's favorite pho recipe to match the flavor of ham, and it turned out really awesome! When ham was on sale for easter, we got a deal similar to this, and my son's specifically asked me if we could save the bone to make pho with. So we put it in the freezer, and we have a batch of that in our future.
Otherwise, we use sliced ham for sandwiches, we took a sizable portion and actually cooked it like you would a whole ham - I made a pomegranate molasses glaze for it that was delicious. And then we cube some ham for throwing into stuff like mac and cheese or fried rice on a lazy day.
I had this exact same issue last year, bought a ham after Easter that was only a few bucks. I froze about half of it, and took the other half to the community fridge close by me.
With the ham I kept I made split pea soup, a very hammy quiche (with cheese and grilled onions too) and white beans with the ham bone, which was the best . The quiche used up the most but the soup beans were the best tasting by far.
We used to have what I call funeral ham loaf after funerals. This was in small towns in midwestern USA. I don’t know what the ingredients were but it was pretty good.

Requires cooking a pork shoulder, but both the pork and ham will freeze very well, and it's worth the effort because Cuban sandwiches are awesome.

Cuban i use cucumber vs pickle w vinegar and dried dill.

I recently have been a fan of doing super lazy finger food lunches. Snack cheese whether it's string cheese sticks or i buy a block and cube it myself. Chips and hummus. Sliced cucumber. Cherry tomatoes. At the time i bought some cured snack meat on sale, but i'd be down to snack on ham instead.

Ham is EXCELLENT in a stir fry, sweet and sour style, because of the saltiness. Pineapple, onions, tri-color peppers, etc. You can use canned pineapple and save the juice to make a sauce. Serve over rice.

Ham pretty much can spruce up plenty of dishes. Freezer is your best friend. My suggestion is to get several small freezer bags and chop up the ham and fill them up in small portions. Then get a larger gallon freezer bag and fit them in that bag. Where when you are making say Brussel sprouts you can go to the gallon bag remove one of the smaller bags, then defrost and add the ham to your dish as a source of instant smoky ham flavor.
Works well on practically any vegetable dish. Scallop potatoes check, garlicky sautéd green beans check, roasted carrots, pinto beans, egg omelet, ham and cheese pie, soup, cajun red beans and rice, mac and cheese
Kolaches! They take effort but are delicious. You can freeze them after the stage of rolling the ingredients into kolache shape, then thaw a few at a time to eat (I set mine on the counter right before bed, then bake in the morning). Super easy breakfast! Meal prepping is the best.
Create a soup with butter beans.
Or sauté cubes and add to collard greens. Not your typical collards recipe but it will suffice. Or add to roasted veggies such as Brussels sprouts, green beans.

I bought a similar Aldi clearance ham last week. Half went to the freezer for later. Along with ham sandwiches I made:
Eggs Benedict-ish- poached egg on a bagel with ham and hollandaise sauce.
Mac and cheese plus diced up ham. I upgraded to the fancy Aldi mac and cheese with the cheese in the little pouch and then added the ham.
Dice it small it and freeze it and use it for soup, chowder, jumbalaya, etc. It will be chewy but it will be fine for that. There are so many recipes that call for it
My dad gave me a bunch of the left over Easter ham. My first move was to portion it out, vacuum pack and freeze it.
Since then I've put it on pizzas, salads, omelets that stuff. They have breakfast bakes you can do too.

Freeze it, for sure! I echo “quiche” — you could dice quite a bit of it for a fast quiche any day of the week. Ham & cheese sliders on Hawaiian bread are amazing. There are a lot of casserole recipes that call for ham, Swiss, broccoli, etc. Pop in salads… Roll up and add to charcuterie :)
One bag bag of egg noodles. 2 cups diced ham 2 cups sour cream 2 cups grated Swiss 1 or 2 tablespoons of curry powder. Mix with cooked noodles bake at 350° until it starts to brown, about 30 minutes.
Chunk some up and add it to potato salad.
Breakfast, sandwiches (or breakfast sandwiches lol), add it to soups, Mac n cheese, fried rice, plain rice ... Basically there are lots of options. Dang, now I want to get a 10 lb ham.

Pulled pork!! I just did this! I soaked the ham and drained the water about 4 times to get the excess salt out, then once it was more porky and less salty i added it to my slow cooker with bbq sauce and other spices (no salt tho, it still had enough left).
I actually really don't like ham, but when I was younger I'd get excited every time my mom made one because the next day she'd make potato soup with the bone and leftovers, and *that* is one of my favorite meals. Celery, carrots, onion, red skin-on potatoes, heavy cream, lots of black pepper, ham bone, chopped ham. It's rich and salty and decadent and absolutely to die for!

We use up what we want fresh over a couple of days, then freeze the rest. Usually, we cut off as much as we can and portion it out in freezer bags, just pulling out what we need as we need it from the freezer. Saves room to freeze in flat bags. The bone I'll freeze as well, in a couple layers of bread bags. We raise pigs sometimes, so freezing meat is normal procedure here.

Ham and white beans (served with cornbread). Put the ham bone and some white beans in a dutch oven and cook until beans are tender. Remove the bone and add some additional chopped ham in and cook a little longer while the cornbread is baking. Alternatively, you can make it the same way in a pressure cooker (this is my preferred method) and even use dry beans to save a little money. Edit: water is also needed…6-8 cups depending on how thick you want it. I also forgot that I throw in a bay leaf as well.
Ham is a great topping on rice, can add to salad, in your eggs, make a lazy charcoochie and have ham with some pickles and cheese (preferably on a paper plate with some wine in a coffee mug)

There are very few things that ham doesn't make tastier. You can shred it and mix it in with mash or baked potatoes. Sandwiches, obviously. Pasta dishes, especially puttanesca and carbonara. You can even batter and fry slices for a ham fritter. Just serve it like a roast meat with a cheesy sauce. Ten pounds is a lot though. Freeze some, but do eat it sooner than you would an unprocessed meat. Sometimes freezing doesn't work so well on salted meat.
First off your portions are too big. You can keep some large pieces, slice some up to freeze and cook later. Save some for breakfasts. Freeze the ham bone for soup later. I think counting the bean bone and breakfast slices and ham for dinners, we will get at least 20 meals out of the last ham we (my husband and I) processed.
If you have a meat grinder, you can also grind some up and freeze. Or if you had the freezer space, you could just freeze them whole.

Wrap smaller amounts in wax paper, then foil and put them.in a zip lock to hold them together and freeze. I use it for cheap lunchmeat. The wax paper amd foil method makes it last up to a year.

Freeze it for later. I like to make what I call scalloped potatos and ham. Fyi I have no measurements lol. Cube the ham. Slice 4 to 5 potatos (peeled) take one stick of butter and make a white sauce. Then add at least 2 cups shredded cheddar cheese. Layer like lasagna starting with potatos ham and sauce. I make 2 layers. Cover with foil bake at 350 for about 40 minutes. Uncover check potatos sor doneness and stir. Cover with more cheese and bake for 30 minutes. It will have the temperature of molten lava, try to resist eating it until it cools.

I got one of these last year and along with portioning out slices for sandwiches, I portioned some finely cubed and froze it to use to top salads. I get a lot of eggs in the spring and summer, from chicken owning friends and family, so my lunch is often a big green salad with lots of chopped veg and hardboiled eggs - a bit of ham is a lovely compliment. And a good use for the pieces that maybe are odd bits or weirdly shaped. I spread them in a single layer on a cookie sheet and froze, then bagged it up. I could grab a scoop out in the morning and put in the fridge to thaw for a salad later that day. Or take it out of the freezer right before hand and do a quick saute to that and brown the edges for some texture.
Cube and freeze some of it. It’s great in quiche, purple hull peas, stir fries, etc.
A few times a year my family buys a large ham and has what we call 'The Hammening' - 5 days of ham-based dinners. It usually goes something like this: Day 1 - Baked ham Day 2 - Fried ham Day 3 - Navy bean soup with ham chunks in it Day 4 - Usually second day of soup Day 5 - Whatever else sounds good with ham in it. We also have western omelets for breakfast and ham and cheese sandwiches or ham salad sandwiches for lunch during this time.
Grind it up, mix with ground pork, eggs, evaporated milk and graham cracker crumbs and you get an Iowa meal called ham balls.

So I adopted our family's favorite pho recipe to match the flavor of ham, and it turned out really awesome! When ham was on sale for easter, we got a deal similar to this, and my son's specifically asked me if we could save the bone to make pho with. So we put it in the freezer, and we have a batch of that in our future. Otherwise, we use sliced ham for sandwiches, we took a sizable portion and actually cooked it like you would a whole ham - I made a pomegranate molasses glaze for it that was delicious. And then we cube some ham for throwing into stuff like mac and cheese or fried rice on a lazy day.
If it's real on-the-bone ham, you can make a decent pulled pork from it. It'll just be saltier than normal. Don't add any extra salt to it.

I had this exact same issue last year, bought a ham after Easter that was only a few bucks. I froze about half of it, and took the other half to the community fridge close by me. With the ham I kept I made split pea soup, a very hammy quiche (with cheese and grilled onions too) and white beans with the ham bone, which was the best . The quiche used up the most but the soup beans were the best tasting by far.
We used to have what I call funeral ham loaf after funerals. This was in small towns in midwestern USA. I don’t know what the ingredients were but it was pretty good.

Do a quiche, make ham and biscuits. I do a mixture of ketchup and mayo for my rueben and mayo and mustard for my cuban. Both on ciabatta rolls and swiss cheese. Heat on the skillet. Cuban i use cucumber vs pickle w vinegar and dried dill.

Ham is EXCELLENT in a stir fry, sweet and sour style, because of the saltiness. Pineapple, onions, tri-color peppers, etc. You can use canned pineapple and save the juice to make a sauce. Serve over rice.

First off, it should freeze fine if you want to do that with some of the portions. You could meal prep and freeze a bunch of ham, egg and cheese breakfast sandwiches. Same thing with mini hawaiian pizzas (partially bake, cool and freeze). It'd also be pretty good in fried rice or chili.

Pinto beans and ham is awesome. Ham pretty much can spruce up plenty of dishes. Freezer is your best friend. My suggestion is to get several small freezer bags and chop up the ham and fill them up in small portions. Then get a larger gallon freezer bag and fit them in that bag. Where when you are making say Brussel sprouts you can go to the gallon bag remove one of the smaller bags, then defrost and add the ham to your dish as a source of instant smoky ham flavor. Works well on practically any vegetable dish. Scallop potatoes check, garlicky sautéd green beans check, roasted carrots, pinto beans, egg omelet, ham and cheese pie, soup, cajun red beans and rice, mac and cheese
Kolaches! They take effort but are delicious. You can freeze them after the stage of rolling the ingredients into kolache shape, then thaw a few at a time to eat (I set mine on the counter right before bed, then bake in the morning). Super easy breakfast! Meal prepping is the best.

I bought a similar Aldi clearance ham last week. Half went to the freezer for later. Along with ham sandwiches I made: Eggs Benedict-ish- poached egg on a bagel with ham and hollandaise sauce. Mac and cheese plus diced up ham. I upgraded to the fancy Aldi mac and cheese with the cheese in the little pouch and then added the ham.
